Flor de Sal: The white treasure of Mallorca that elevates every dish at Manique

This week, part of the Manique team had the pleasure of visiting the breathtaking Salinas d’Es Trenc: a natural sanctuary and the birthplace of one of the purest, most prized salts in the world: flor de sal. 🌿✨

Located in the heart of a 2,800-hectare protected nature reserve, the salt flats have been producing artisanal salt for over 80 years. They’re also home to a rich biodiversity, including the iconic flamingos that make the landscape even more magical.

During our visit, we witnessed the delicate, manual process of harvesting flor de sal. The thin, crystal-like layer that forms on the surface of the salt ponds, carefully collected under the perfect Mediterranean conditions of sun and wind.

At Manique, every dish ends with a touch of Es Trenc

At Manique, our commitment to quality and authenticity guides every detail. That’s why every single dish is finished with flor de sal from the Es Trenc salt flats, adding that perfect, delicate crunch and mineral-rich flavor that makes our food stand out.

Not only that: the very same salt is served at our tables, so our guests can enjoy it from the very first bite.

This flor de sal is often referred to as the “caviar of salt”: hand-harvested, untreated, and naturally rich in minerals. It’s more than seasoning; it’s a signature of our kitchen.

More than flavor: a philosophy

Choosing to work with locally harvested flor de sal isn’t just about taste. It’s part of our deeper philosophy: supporting local producers, respecting the environment, and bringing Mallorca’s best ingredients straight to your plate.
